ఘుమఘుమలాడే తమిళనాడు స్టైల్ కళ్యాణ రసం |Taminadu Style Kalyana Rasam in Telugu





As many of us my lunch/dinner is incomplete without a delicious rasam. So, today am going to show you tamilnady wedding style rasam. the speciality of kalyana rasam is its spice mix which is roasted and blended freshly. If you are not eating garlic then you can avoid but it adds a lot of flavour and taste to rasam.

Ingredients:

Oil - 2 tbsp
Mustard Seeds - 1 tsp
Turmeric Powder - A Pinch
Dry Red Chillies - 4
Sliced Tomotao - 1 cup (2 Med)
Salt - As per taste
Toor Dal - 100 G
Tamerind - 75 G
Curry Leaves - 3 pinnates
Pepper Seeds - 1 tbsp
Garlic Cloves - 7-8
Cumin Seeds -  1 tbsp
Chopped Coriander - 1/2 Bunch
Asafoetida - 1/4 tsp

Preparation:

Step 1: Wash toor dal and cook in cooker. After 3 -4 whistles, take out mash and keep it aside.
Step 2: Add Pepper Seeds, Cumin Seeds & Garlic Cloves in a small jar. Grind coarsely and Keep it aside.
Step 3: Wash tamarind and soak for sometime. Extract the juice and keep it aside.
Step 4: Take a pan and add 2 tbsp oil and heat it.
Step 5: Add Mustard seeds and let it splatter.
Step 6: Add Turmeric powder & Red Chillies. Saute for till nice aroma comes out.
Step 7: Add Tomatoes & salt and cook untill tomato becomes soft. Cover the lid and cook.
Step 8: Add 1/2 ltr water and let it boil.
Step 9: Add Tamarind extract and mix it well. (Adjust as per your taste)
Step 10: Add Curry leaves, Rasam mix (prepared in step 2), coriander leaves & Asafoetida. Cook without mixing.
Step 11: Once it starts boiling, turn off the heat and take into a serving bowl.
Steo 12: That's it.. Serve HOT and enjoy delicious Kalyana Rasam.
